Fluffy and Soft eggless Atta cake recipe

This cake is a perfect dessert that is light, fluffy, delicious, and eggless! If you are a vegan or allergic to eggs then, this eggless atta cake is the right recipe you need to try baking. This mouth-watering cake is loaded with a lot of nuts, a dash of cinnamon, and cardamom. Also, you can add icing or tutti-fruity to this cake when you bake it for any special occasion.

Ingredients: 

  1. Wheat flour/ Atta- 1 ½ cup (180gms)
  2. Brown sugar/Jaggery- 1cup
  3. Baking soda- ¼ tsp
  4. Baking powder-1tsp
  5. Salt-1/4cup
  6. Milk- 1cup
  7. Vanilla essence – 1tsp (optional)
  8. Green cardamom-1tsp
  9. Cinnamon- 1tsp
  10. Yogurt- 1 cup
  11. Milk- ½ cup
  12. Vegetable oil- ½ cup
  13. Chopped nuts, choco chip, dry fruits, tutti-fruity (optional)

Whole wheat flour: Whole wheat flour is what we use in making puri, chappathi, and many other Indian flatbread varieties. Compared to white flour, whole wheat flour is very nutritious and adds a tasty nutty flavor to your baked food. But whole wheat flour requires less water compared to white flour, therefore making the batter stiff and hard. So always add extra water when preparing the dough.

Brown Sugar/ Jaggery: You can either use brown sugar or jaggery in this recipe. They both give the same color and flavor to your cake. But brown sugar is refined sugar treated with bone charcoal whereas, jaggery is unrefined sugar and hence vegan. If you want to make a 100% vegan cake, then go for Jaggery. Otherwise, brown sugar is also good to use.

Baking soda & baking powder: Do not forget to use baking soda and baking powder. These are the leavening agents that help the cake rise and make it extra fluffy and moist.

Salt: A pinch of salt adds flavor to your eggless atta cake

Milk: Milk improves the texture and gives the cake a soft crumb structure. It also increases the shelf life of your cake. 

Vanilla essences: It not only adds a fabulous flavor to your recipe but also brings out the flavor of other ingredients used in the recipe. 

Yogurt: You can use Greek yogurt. If that is not available then go for homemade yogurt but do not add the watery part of the yogurt. Use only thick yogurt. 

Vegetable Oil: This can be any flavorless oil such as sunflower oil, soya bean oil, or canola oil. 

How to Bake:

  1. Grease and line a SunBrand aluminum cake mould using parchment paper. Preheat the oven to 189deg C.
  2. In a small bowl mix, butter and baking soda together. Keep it aside for 5 minutes until it foams. 
  3. Take an oversized bowl and mix with 1 cup of brown sugar or Jaggery and ¾ cup of vegetable oil.
  4. Now, add 2 cups of whole wheat flour/atta, 1tsp baking powder, cinnamon powder, cardamom powder, vanilla essence (optional), and a pinch of salt.
  5. To avoid any lumps, sieve altogether. 
  6. Mix well with the cut and fold method until all the ingredients and the dry ingredients combine well.
  7. Now, add 1/2 cup water, or you can add more as required to make a thick batter.
  8. Further, add almonds, raisins, cashews, walnuts, and dates (Note: you can add any dry fruits or nuts as per your preference). Make sure to blend the dry fruits completely in the batter.
  9. Now pour the batter on Sun Brand Aluminum cake mould and bake at 180deg C for 40mins. 
  10. Allow it to cool completely and cut into thick slices. You add more dry fruits as toppings to make the cake look attractive. If you wish you can add some icing to your cake.
  11. Finally serve the cake with love.

Things to remember

  1. Eggs help keep a cake light and fluffy. But we don’t use egg here therefore get your butter, oil, and sugar mix whipped as nicely as possible. This mixture will do the same trick that eggs do in a cake recipe.
  2. Always add the dry ingredients one by one slowly. Be gentle while mixing the dry ingredients as well. 
  3. Add warm milk to the better. Because this will remove any lumps in the cake batter. 
  4. Since it is an eggless cake, make sure to mix everything properly. But over-mixing can also lead to a dry and tough cake.
