1. Soak the rice, urad dal, and half a spoon of methi seeds together for 4 hours

2. Then grind the urad dal first into a smooth paste and then grind the rice with 85% grinding output.

3. Mix the urad dal and rice batter 

4. Now ferment the batter for about 8 to 9 hrs.

2. Keep the idly batter ready in hand, apply few drops of oil all over the heart shape idly plates and now pour the idly batter and let it boil for 15 minutes.

Podi Idly 

The simplest and most common Idly variety that your kids will savor. 

1. Firstly, dry roast red chilies, peanuts, urad dal, sesame seeds, cumin, grated coconut, and curry leaves. 

2. Now let it cool for a few minutes.

3. Meanwhile, pour the batter into Aluminum heart-shape idly plates and let them steam cook.

4. Grind the dry roasted ingredients in a blender.

5. Now take an Aluminum Kadai add oil add a pinch of hinge and mustard. Let the mustard splutter. Now, turn off the stove.

6. Now add the heart idles and add some podi. Now gently toss them in the Kadai until they become crisp and cooked. Add more oil or ghee if needed.

7. Now podi ildy is ready to serve.

Rava Idly

Rava idly is nothing but steam cakes made of Rava or semolina which tastes delicious with coconut chutney or tomato chutney.

1. In an Aluminum, Kadai adds 2tsp ghee fry cashew nuts and fry until it turns golden.

2. In the same Kadai temper ½ tsp mustard, ½ tsp cumin, chopped green chilies as per your taste. 3/4tsp grated ginger. Saute for a few seconds.

3. Now, add 1 cup Rava on low flame until it is aromatic.

4. Let the Rava cool completely. Now add chopped coriander leaves, and salt as required. Pour ¾ cup curd avoid using sour curd and mix well.

5. Pour half a cup of water and let it rest for 30mins.

6. Now add few drops of oil to the Aluminum heart shape idly plates and keep them aside.

7. Now add the required amount of water to bring the rava to batter consistency. The requirement of water may vary depending on the kind of rava used. 

8. Now pour the batter into the heart shape idly plates and place it in the idly steamer with water. Let t steam cook for 10 minutes on high flame.

9. Now the Rava idly is ready to be served. 

Jaggery Idly

Who doesn’t like sweets? This recipe is very simple that you can make it often for your kids and family. They will love it as it is filled with the flavor of moong dal and cardamom.

1. Take an aluminum Kadai and dry roast ½ cup moong dal and grated coconut until they turn golden with a good aroma.

2. Let the dry roast ingredient cool for some time. 

3. Now make thick jaggery syrup by grating jaggery and boiling it in water. 

4. Once the syrup turns thick add it little by little to the idly batter. Add according to how much sweetness you needed.

5. Now add few drops of oil to the Aluminum heart-shape idly plates and keep them aside.

6. Mix the dry roast ingredient also with the batter. Now, pour the batter into the idly plates.

7. Let it steam cook in an aluminum idly pot/ steamer. Once it is cooked the sweet jaggery idly is ready to serve.
